3. In a separate skillet, heat another tablespoon of ghee or oil over medium-high heat. Add the chicken and cook until browned on all sides and cooked through (about 6-8 minutes).
4. In a large saucepan, combine the cumin, coriander, cardamom, cinnamon, turmeric, chili powder (if using), salt, and pepper. Cook over medium heat, stirring constantly, for 1-2 minutes.
5. Add the cooked chicken to the saucepan and stir to coat with the spice mixture.
6. Add 2 cups of water to the saucepan and bring to a boil. Drain the soaked rice and add it to the saucepan. Stir gently to combine.
7. Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15-20 minutes or until the rice is cooked and the liquid has been absorbed.
8. Stir in the soaked saffron threads and their liquid. Fluff the biryani with a fork to combine.
9. To assemble the biryani, layer the cooked rice, caramelized onions, and chicken in a large serving dish or individual plates. Garnish with chopped cilantro (if using).
