Ingredients:
1. 1 cup uncooked Calasparra rice
2. 2 cups water
3. 2 tablespoons olive oil

15. 2 lemons, juiced

Instructions:

6. Bring to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes or until the rice is tender.
7. Stir in the lemon juice and parsley.
